Enzyme loaded liposomes for cheese ripening


Abstract A review with 82 refs. Liposomes provide an ideal delivery device for many dairy products and processes. A particular application of liposome technol. is its use for acceleration of cheese ripening. Addn. of enzyme loaded liposomes into the cheese milk brings about a more uniform distribution of the enzyme for casein degrdn., and prevents premature enzymic action. With carefully designed formulation, liposomes enable a cheese curd retention of about 90%, and accelerate cheese ripening without compromising its texture quality compared to conventionally produced cheese. Lipid compn. of the liposome membrane influences its stability in the milk and the rate of cheese ripening, and this can be employed to control the process. These and other aspects of cheese ripening by enzyme loaded liposomes are reviewed in this chapter.
